1. In a saucepan, bring 3 ½ cups of water to a boil.
2. Add the couscous and bring to a boil.
3. Reduce heat and simmer covered for 10 minutes.
4. Remove from heat and let stand 8 minutes.
5. Meanwhile, prepare the dressing by mixing all the ingredients.
6. In a large bowl, place the rest of the salad ingredients on the couscous.
7. Mix everything well and add the vinaigrette.
