1. In a saucepan, bring the chicken broth to a boil.
2. Stir in the couscous pearls and cook for 8-10 minutes.
3. Let the couscous cool.
4. In a pan, cook the onion, carrot, garlic and peppers with olive oil for 3 minutes.
5. In a large bowl, combine the couscous with the grilled vegetables, roasted pumpkin seeds and chopped herbs.
6. Season to taste and serve.
